Whole Grain Banana Cake Squares

I always grab bananas at the store to throw in smoothies or have for breakfast. This week I guess I forgot to eat them because they were brown and mushy before I knew it. I’d much rather life hand me brown bananas than lemons because bananas are a lot more fun to bake with. I couldn’t decide on making banana blondies or banana bread and ended up settling for something in between.

I intended these to be a healthy afternoon snack, but then covering them in chocolate and peanut butter seemed a lot more fun. They actually aren’t bad for you with their whole grains, fiber, natural sugars and a little bit of healthy fats. The squares are definitely sweet enough on their own—adding a drizzle on top just makes them that much better.

The topping I used was just a chocolate ganache made with 1/4 cup chocolate chips, 2 Tablespoons of maple syrup, and a Tablespoon of water and a peanut butter sauce made with 2 Tablespoons peanut butter, 2 Tablespoons of maple syrup, and a Tablespoon of water all mixed and drizzled on top. This would also be really delicious with a vanilla or peanut butter buttercream.

Prep time: 10 minutes

Cook time: 30 minutes

Ingredients(Makes one 8 x 8 pan):

  • 1 cup(2 large) mashed bananas
  • 1/2 cup sugar
  • 1/4 cup peanut butter
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup(80g) brown rice flour
  • 1/2 cup rolled oats
  • 1/2 teaspoon baking soda

Method:

  1. Preheat your oven to 350 degrees and grease an 8 x 8 baking pan.
  2. In a large bowl, beat together the mashed banana, sugar, peanut butter, oil, eggs, and vanilla.
  3. Add in the brown rice flour, oats, and baking soda and mix well.
  4. Pour the batter into the pan.
  5. Bake for 25-30 minutes until the center has set.
  6. Remove and let cool. Cover with frosting, ganache, or leave plan to serve.

24 Hours of Peanuts {Giveaway}

A couple months ago I was lucky to be included in a project the National Peanut Board was making with various food bloggers. Just this month the 24/7 Energy Recipe Resource project has been printed and released and I got a few copies to flip through. The book is filled with peanut facts, ways to snack and recipes that incorporate peanut butter into every meal. Come to think of it I’m sure there have been days when I’ve had peanuts at every meal but never with such a range of flavors and unique ideas for using them.

My recipe contribution was peanut butter granola. I love that and need to make it again sometime, but before that I wanted to try some of the other recipes in the book. One of the simplest and most appealing I could find was for a peanut butter banana quesadilla. The recipe calls for whole wheat tortillas but I swapped those out for corn tortillas to easily make it gluten-free.

It was delicious. I never would have thought to put cinnamon with peanut butters and bananas but the flavors totally worked. I would probably add a drizzle of honey next time because the peanut butter I used had no sugars added to it. Otherwise this was a great snack and there are plenty of soup, sauce, and dessert recipes to try to fill the other 23 hours of the day.

White Chocolate Peanut Butter Cookies

I find it very easy to get addicted to certain ingredients. Lately for me it’s been white chocolate baking chunks from Whole Foods. I try not to eat them straight out of the bag and actually make recipes with them, but these kind of things happen.

To finish off the bag and keep myself from eating them with spoonfuls of Nutella(highly recommended by the way) I made these cookies with the last 1/2 cup. I didn’t know white chocolate and peanut butter went so well together until I tried Peanut Butter & Co.’s White Chocolate Wonderful and they opened my eyes. These cookies have all the goodness of nutty peanut butter with creamy white chocolate—what more could you ask for?

This is basically your grandmother’s easy peanut butter cookie recipe with white chocolate mixed in. You could use white chocolate peanut butter or some earthy spices to mix it up but I think they’re just as addictive when they’re done simple.

White Chocolate Peanut Butter Cookies

Prep time: 10 minutes

Cook time: 12 minutes

Ingredient(Makes a dozen cookies):

  • 3/4 cup creamy peanut butter
  • 1 egg
  • 1/2 cup + 2 Tablespoons sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon baking soda
  • 1/2 cup white chocolate chips

White Chocolate Peanut Butter Cookies Dough

Method:

  1. Preheat your oven to 350 degrees.
  2. In a large bowl, beat together the peanut butter, sugar, egg, vanilla and baking soda.
  3. Fold in the white chocolate chips evenly.
  4. Roll the dough into 1-ounce balls. Lightly press down on the balls with a fork in a criss-cross pattern to flatten it to about 3/4-inch thickness.
  5. Bake for 12-14 minutes until the tops are firm to the touch and the edges begin to brown.
  6. Remove the cookies from the oven and let them cool before moving to a separate plate.

3 Favorite Dips

The funny thing about being a food blogger is that you make recipes for 4 or 8 or 12 and sometimes end up eating them all by yourself. That’s not a problem when the recipe’s good at least.

All of these dips I can say I’ve eaten half to entire portions of(not in one sitting… usually) and yet I keep making them again and again. They tend to get a lot of hits from Pinterest or Facebook because of how quick and easy they are—two things I always look for in recipes, too—so I thought I’d share them again because you can never have too much of a good thing.

Fruity Peanut Butter Yogurt Dip—Is it yogurt? Is it a spread? It’s somewhere in between; it’s a dip and a tasty one at that. But my favorite thing about this recipe isn’t how easy it is. It’s how many different ways you can make it. I’ve had this with strawberry yogurt, vanilla yogurt, and plain yogurt with nutella and each time it comes out equally good. But as fun as it is as a dip it’s usually always better with a spoon so keep that in mind.

Peanut Butter Chocolate Chip Dessert Hummus—Out of all the times I’ve put beans into a dessert, this is probably the weirdest but also the tastiest. The texture and flavor is a lot like raw cookie dough except without all of the flour, refined sugars, and raw eggs. I’ve been obsessed lately with using this in place of peanut butter in pb&j sandwiches; if you’ve never tried something like this you’d be surprised how much you’ll love it.

Vegetarian Buffalo Chicken Dip—Finally something savory. I made this dip for Superbowl Sunday and have wanted to make it every weekend since. It’s creamy, spicy, and a little tangy all at once. If you’re a new vegetarian or still love eating meat you won’t know the chicken is gone at all. The next day put the leftovers into some warm tortillas and you’ll have a whole new meal.

I’ll be the first to admit that gluten-free baking is tougher than baking with flour. Instead of just wheat you have a hundred different varieties of flour and starches to work with and if you’ve never used them before you have no idea how they work in recipes. It’s a hassle.

I’m always drawn to making recipes that use just one type of flour because I don’t like to have to go out and buy 6 or 7 to make a single loaf of bread. This recipe only uses brown rice flour, which is a gluten-free whole grain flour that bakes well and doesn’t overpower any of the other flavors. You’ll have a hard time telling this bread is gluten-free.

Prep time: 15 minutes

Cook time: 60 minutes

Ingredients(Makes 1 loaf):

  • 2 large bananas
  • 4 eggs
  • 3/4 cups sugar
  • 1/2 cup peanut butter
  • 1/3 cup vegetable oil
  • 1 1/2 cups(240 grams) brown rice flour
  • 1/2 Tablespoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips
  • 1/2 cup water

Gluten-Free Peanut Butter Banana Bread Slice

Method:

  1. Preheat your oven to 350 degrees.
  2. Mash the bananas until they’re completely smooth.
  3. In a large bowl, stir together the bananas, eggs, sugar, peanut butter, and oil until mixed.
  4. Add in the flour, baking soda, cinnamon, vanilla, and chocolate chips and stir.
  5. Slowly add the water until the batter has a loose consistency.
  6. Grease a 9-inch loaf pan.
  7. Pour the batter into the loaf pan and bake for 60 minutes until the center has set.
  8. Remove from the oven and let the loaf cool before cutting in.

I found my loaf got stale sitting on the counter after a day but microwaving a slice for 60 seconds between two paper towels made it taste fresh out of the oven.

Having a reliable blender has improved my eating habits in a lot of unexpected ways. I’ve started having more fruit smoothies and vegetable juices throughout the day. A lot of the time I enjoy them so much I forget they’re healthy.

By far my favorite is a chocolate peanut butter smoothie; I don’t think there’s any surprise there. It’s similar to having a Reese’s cup but you can have it everyday and still feel good. How does something like that even exist?

You can use milk, almond milk, or coconut milk in place of the water; however, I think this is deliciously creamy as is on account of the peanut butter. If you ever need to make peanut or almond milk in a jiffy, you can make it by blending ~1 Tablespoon of nut butter with a cup of water.

  • 1 banana, chopped
  • 2 Tablespoons peanut butter
  • 2 heaping Tablespoons cocoa powder
  • 1 Tablespoon honey(optional)
  • 1/2 cup water
  • 2/3 cup ice
  • 1 scoop protein powder(optional)

Stonyfield Blends & Blendtec Giveaway

As a recipe developer for the Clean Plate Club, I had the opportunity to try Stonyfield’s newest yogurt Blends as well as a Blendtec to play around in the kitchen with. Since I’ve got it I’ve been bookmarking smoothie, juices, and soup recipes left and right. The best part is that I have an identical pack to giveaway to a reader–more on that at the end of the post!

Stonyfield Peanut Butter Dip

The first thing I blended up was fruity peanut butter yogurt dip made with french vanilla Stonyfield Blends. After almost 2 years that recipe needed a facelift. With the vanilla yogurt, it tasted more like a peanut butter frosting than a dip and was deliciously smooth.

I’ve found I like the Blends better than the regular variety of Stonyfield yogurt. The texture seems a little creamier even though the flavors I received were non-fat, and I’ve never been a fan of having the fruit on the bottom of the yogurt anyway. And because it’s Stonyfield they’re all entirely organic. I would say the Blends are a win-win.

Blendtec Giveaway

My favorite thing about the Blendtec so far has been how easy it is to use. I’ve been working with a Black & Decker food processor for years now and the Blendtec is lighter, sturdier, has less pieces to it, can handle heavier loads, and is much easier to clean. It’s blown my old processor away in just about every aspect. It can be hard to clean under the blade after processing something sticky like peanut butter; that’s been my only trouble so far.

Between Christmas shopping, studying, writing papers and taking exams I haven’t had much time to cook or make new recipes lately. The nice thing about having a living room full of Christmas lights, stockings and a tree is it makes it easy to fall back into the holiday spirit after a stressful day.

I made these buckeyes last night for myself and my roommates because who doesn’t love a chocolate and peanut butter nightcap? I have to admit that I’ve made recipes like this often enough that I’ve stopped measuring things as I go along. Really you can make this in any proportion as long as the dough comes out the right consistency. They aren’t the prettiest buckeyes but they’re taste makes up for their appearance.

If you want to change the flavor slightly add a touch of vanilla or cinnamon.

Peanut Butter Buckeyes

Prep time: 20 minutes

Cook time: 0 minutes

Ingredients(Makes about 20 buckeyes):

  • 1 cup creamy peanut butter*
  • 6 Tablespoons butter, melted
  • 1 1/2 cups powdered sugar, sifted
  • 1 1/4 cups bittersweet chocolate chips OR 10oz bittersweet chocolate, chopped

*If you’re using no-stir peanut butter, melt it in the microwave briefly before mixing it with the other ingredients

Method:

  1. In a large bowl mix together the peanut butter, butter and powdered sugar until it forms a dough that sticks to itself. If for some reason your dough is too thin, slowly add more powdered sugar until it’s workable.
  2. Roll the dough into 1-inch balls and place them on a non-stick surface.
  3. Put the peanut butter balls in the freezer to set.
  4. While the peanut butter balls are hardening, melt the chocolate in a microwave or over a double boiler.
  5. One by one dip the peanut butter balls into the melted chocolate to coat their outside and put them back on the non-stick surface.
  6. Refrigerate the peanut butter balls until the chocolate has set. Keep cold until ready to serve.

My favorite thing about this time of year is going present shopping for friends and family but boy does it eat up a day. After going to several stores and eventually CVS for wrapping paper and tape, I couldn’t help but do some grocery shopping and pick up the bag of Reese’s Pieces that was conveniently on sale.

I’ve made peanut butter granola before and chocolate granola but never chocolate granola with peanut butter. That was an oversight seeing how peanut butter and chocolate has to be the best combination known to man. Just think of Reese’s cups and Fastbreak bars and—of course—Reese’s Pieces. I’m not quite sure if adding candy to granola still makes it breakfast food but it has peanut butter so it must be healthy.

This is a great granola to make if you like granola with clusters since the peanut butter holds the oats together. Just be sure not to break it up too much after it’s done cooking to keep most of the clusters.

Prep time: 10 minutes

Cook time: 20-25 minutes

Ingredients(Makes about 3 cups):

  • 2 cup rolled oats
  • 6 Tablespoons peanut butter
  • 1/4 cup cocoa powder
  • 6 Tablespoons to 1/2 cup maple syrup(or any liquid sweetener)
  • 1/2 cup Reese’s Pieces
  • 1/2 cup peanuts(optional)

Method:

  1. Preheat your oven to 350 degrees.
  2. In a large bowl mix together the oats, peanut butter, cocoa powder and maple syrup. If the peanut butter you’re using is the no-stir kind, melt it in the microwave briefly before mixing it in.
  3. Spread the oats out onto a non-stick baking tray. Bake for 20-25 minutes until the granola cooks together.
  4. Remove from the oven and break the granola into clusters using a utensil.
  5. Let the granola cool completely before adding in the Reese’s Pieces.
  6. Store in an air-tight container at room temperature.

Gluten-Free Peanut Butter Cookie Recipes

I’m starting to get the impression that I’ll be craving cookies all December. They’re the perfect dessert to end a meal because they aren’t too decadent or messy but still delicious. I’m always drawn to peanut butter cookies; then again I’m drawn to peanut butter anything.

These are a few of my favorite peanut butter cookies I’ve made before that are tried and true. I’ll be doing a lot of baking over the holidays and I’m sure I’ll need one or a few of these recipes. I hope other people can enjoy them, too.

Peanut Butter Chocolate Chip Macaroons. I haven’t made these in over a year which is a crying shame. They’re probably one of the easiest to make for beginning bakers and they’re vegan and gluten-free.
