When it comes to food, there are two things I care about: Most importantly how it tastes, but also how it smells. A lot of people will tell you we eat with our eyes, but given how close are taste receptors and smell receptors are, it’s no question that there’s a link between taste and smell. Good food must smell good. And this smells terrific.

When I opened up my oven after this had finished cooking, the entire kitchen smelled like Christmas. You know that warm, earthy familiar smell that’s a bit nutty and complex. I got distracted for a moment and forgot that this was food to eat. The taste is just as good; the soft, sweet squash contrasts the crunchy, spicy chickpeas, and the maple syrup forms a glaze over the whole thing bringing it together. I can’t recommend this recipe enough to get a taste of the season. 

Roasted Maple Cinnamon Chickpeas And Squash

Prep time: 10 minutes

Cook time: 70 minutes

Ingredients(Makes 4 servings):

  • 1 15-ounce can chickpeas, drained
  • 2 cups cubed butternut squash
  • 2 Tablespoons olive oil
  • 1/4 cup maple syrup
  • 1 Tablespoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt

Method:

  1. Preheat your oven to 375 degrees.
  2. Combine all of the ingredients together in a big bowl and mix them until the wet ingredients and spices cover the squash and chickpeas.
  3. Lay the squash and chickpeas out on a baking tray and spread them out keeping it as close to one layer as possible.
  4. Roast for 70 minutes until the squash is fork-tender and the chickpeas slightly nutty.
  5. Serve hot or cold. Keep leftovers in the refrigerator for up to 3 days.

Now if only someone would invent smell-o-vision, maybe I could better convince you.

Banana Breakfast Quinoa

Breakfast is almost never a planned meal around here. I’ll wake up and see what I can cook in the microwave and have ready to eat in less than 5 minutes. That works most of the time, but once and a while it’s nice to change things up and eat something that actually has some thought put into it, like this breakfast quinoa.

There’s no reason to just eat quinoa for lunch or dinner. It has a fairly plain taste on its own and can easily be made savory or sweet. It’s especially good as an oatmeal replacement for gluten-free people because you don’t need to worry about buying gluten-free quinoa the way you do rolled oats. For as good as it tastes, this bowl is really easy to whip up, too, using leftover quinoa from your last meal.

If you don’t have leftover quinoa for this but still want to make it, cooking a batch only takes 15 minutes. For each 1/2 cup cooked quinoa you’ll need 1/4 cup uncooked quinoa and 1/2 cup water brought to a boil and covered until all the water’s been absorbed.

Cook time: 0 minutes

Ingredients(Makes 1 serving):

  • 1/2 cup cooked quinoa
  • 1 banana, plus more for garnish
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 Tablespoon maple syrup(optional) plus more for drizzling
  • 2 Tablespoons crushed walnuts

Method:

  1. Using a fork, mash the banana in a bowl into a smooth puree.
  2. Add in the quinoa, cinnamon, and salt and mix together. If the quinoa’s not sweet enough, add the maple syrup to enhance the flavor.
  3. Move into a serving bowl and add on top the walnuts and more banana and maple syrup if desired. Serve as a cold breakfast or—if you prefer—heat it up in the microwave or oven like a hot cereal.

You can really top this with anything. It’s especially good served hot with a melting dollop of PB&Co.’s Mighty Maple on top.

Baked Butternut Squash Mash

Now is my favorite time of the year, for food at least. I love pumpkin, squash, mashed potatoes, sweet potatoes—basically anything starchy that looks like baby food. Naturally I was excited to see local squash at the farmers’ market last week and picked out the biggest, most obscene looking butternut squash I could find.

Like I said, this is basically glorified baby food: Smooth squash puree mixed with amber maple syrup, rich cream, and nutty spices. It’s reminiscent of a pie filling but without the overpowering sweetness so you can feel good about eating this with dinner. It’s definitely a new favorite that I’ll probably turn to time and time again the next few months; it’s good enough that I’d invite it to the Thanksgiving table!

Baked Butternut Squash Mash

Prep time: 5 minutes

Cook time: 30 minutes

Ingredients(Makes 4 servings):

  • 3 cups butternut squash puree*
  • 1/2 cup almond cream(recipe below) or regular cream or other non-dairy cream
  • 3 Tablespoons maple syrup
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

*This is easy to make yourself. Roast a medium-sized butternut squash until the inside is soft. Scoop the flesh out from the skin and puree it in a food processor until smooth.

For the almond cream:

  • 3 Tablespoons smooth almond butter
  • 5 Tablespoons water

Method:

  1. In a small bowl, whisk together the almond butter and water until it forms a rich and smooth liquid.

Method:

  1. Preheat your oven to 375 degrees
  2. Stir together the butternut squash puree, cream, maple syrup, salt, cinnamon, and nutmeg until completely combined.
  3. Scoop the squash into a large casserole dish or individual ramekins. Bake for 20-30 minutes until the squash is heated through and the top has goldened slightly and begun to crack.
  4. Garnish with cinnamon and serve hot.

There were no leftovers, but I figured a picture of a half-eaten bowl was better than an empty bowl.

Gluten-Free Banana Pancakes

I’ve been waiting all week to share these. They aren’t some of the best gluten-free pancakes I’ve ever had, or vegan or banana. They’re just some of the best pancakes I’ve ever had—period. The banana sweetens these perfectly without added sugar, and the cinnamon adds a nice warm touch. They go especially good with a dollop of melting butter toffee peanut butter.

Like my other pancake recipe, these use chickpea flour, which is a great gluten-free alternative to wheat flour. It has high protein and fiber contents making it a healthy breakfast that will fill you up and not have you crashing by 10am. I’m able to find it cheapest in my regular grocery store(Hannafords) in the natural/organic section for less than $4 a bag.

Gluten-Free Banana Pancakes

Prep Time: 5 minutes

Cook Time: 10 minutes

Ingredients(makes 1 serving):

  • 1/3 cup mashed banana(about 3/4 a medium-sized banana)
  • 1/2 cup chickpea flour
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon baking soda
  • 1/4-1/3 cup water

Method:

  1. In a mixing bowl combine the mashed banana, chickpea flour, cinnamon, baking soda and 1/4 cup water and mix.
  2. Add more water if necessary to get the consistency somewhere between thick-runny and runny.
  3. Preheat a non-stick pan over medium heat.
  4. Scoop about 1/4 cup batter into the pan for each pancake. Only cook 1 or 2 at a time to avoid overcrowding.
  5. Cook on one side until the top is bubbly, then flip and cook for about another minute. Repeat until all the batter is used.

Serve with maple syrup, peanut butter, bananas, blueberries—whatever, it will all be good.

Brown Sugar Cinnamon Pineapple Rings

As weird as it sounds, I don’t really like fruit. In fact, I’d rather have vegetables like roasted brussel sprouts for a snack instead of an apple. That’s just how my taste buds are. But I’m a sucker for a sale and had to buy a whole pineapple for $2.50 over the weekend since it was half off. But what to do? I’ve always been intrigued by the brown sugar cinnamon pineapple Whole Foods sells in prepared food and decided to try that. Fruit + more sugar? You really can’t go wrong.

Not only is this delicious, but it has an incredible depth of flavor for something that has just 3 ingredients and takes minutes to make. You could even make this for a party and grill it over the Summer, but it’s fine cold, too. Maybe I’ll start turning around to fruit(maybe…).

Brown Sugar Cinnamon Pineapple Rings

Ingredients:

  • 1 whole pineapple*
  • 1/4 cup light brown sugar or turbinado sugar
  • 1/2 teaspoon cinnamon

*You could also use canned pineapple. In that case, make sure to drain off all the excess liquid before using/

Cut off the ends and side of the pineapple so that just the edible parts remain.

Cut the pineapple into 1/2 inch rings all the way through. Cut out the firm core of each ring with a sharp knife(alternatively, you could switch the order of these two steps; I just didn’t have a knife long enough that would work).

In a bowl, combine all the ingredients and toss the pineapple with the sugar until all of the rings have been evenly coated. Plate and serve or refrigerate until eating.

This is a great refreshing snack. I wouldn’t quite call it a dessert because it doesn’t have chocolate, but I guess in some circles it could pass as a dessert, too.

Snickerdoodle Dessert Hummus

It’s back! After I tried my last batch of dessert hummus, I was eager to make a new flavor. A lot of you pointed out that it looks(and tastes!) like cookie dough. Well, one of my favorite cookies is the classic snickerdoodle; I love the cinnamon sugar crunch on the outside. And since cinnamon, almonds, and chickpeas all share an earthy flavor, I had a feeling this would work out. And it did!

Snickerdoodle Dessert Hummus

Ingredients:

  • 2 cups of chickpeas, drained and washed
  • 1/4 cup almond butter
  • 1/4 cup maple syrup
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • cinnamon sugar for garnish

Peel your chickpeas(recommended) and add them in a food processor with the almond butter, maple syrup, brown sugar, and cinnamon.

Process for about 30 seconds to a minute, until all the ingredients have mixed and the dip is smooth.

Move to a serving bowl and garnish with cinnamon sugar on top.

The obvious question is “How do you serve this?” Well, I would lay it out on a platter with

  • graham crackers
  • apple slice
  • baby carrots
  • cinnamon pita chips
  • mini-chocolate bars

I have to admit that my favorite way to eat these are a spoon; that’s the benefit of cooking for yourself alone.

Maple Cinnamon Blondies

If you ask most people what the pride of New England is, they’d probably say The Red Sox or The Patriots. A foodie, on the other hand, knows that the best part about New England is our maple syrup(with Ben & Jerry filling the 2nd and 3rd spot). There’s nothing like warm french toast with pure maple syrup and some hazelnut coffee on a Fall day in New England. But this isn’t a french toast recipe. It’s better: Dessert. Nicole posted these maple snickerdoodle cookies and instantly my mind was filled with a cinnamon sugar dessert. Instead of cookies, I made blondies since they’re a little less tempermental(and so much denser). This recipe is perfect to have after dinner with a little coffee because it’s just the right balance of sweetness and spice. As we say in New England, fuck you Yankees they’re wicked good!

Maple Cinnamon Blondies

Ingredients:

  • 6 tablespoon butter(or vegan alternative like Earth Balance)
  • 1/2 cup + 2 tablespoons sugar
  • 1/4 cup natural almond butter
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup maple syrup
  • 1 egg
  • 1/2 tablespoon vanilla extract
  • 1 1/3 cup all-purpose flour(or gluten-free alternative like Bob’s Red Mill)
  • 1/4 + 1/8 teaspoon baking soda

Preheat an oven to 350 degrees and let your butter soften before using. Cream together the butter, sugar, almond butter, salt, cinnamon, and nutmeg until it’s all combined.

Next, add the maple syrup, egg, and vanilla extract and stir briefly. Sift in the flour and baking soda and mix until just combined. The batter should be rather thick like a cookie dough.

Grease an 8×8 baking pan and press the dough down in an even layer. Bake for 28-30 minutes until the center is set and the edges turn a crusty golden brown. Let the blondies cool before cutting into squares.

Mine came out a little thin(read: fudgy) since I didn’t use an egg or egg replacer and used gluten-free flour. But the flavor was everything that I wanted and more.

On a related note, I have no idea when this week became all about baked good recipes.  I’ve been eating real food, too(sometimes…), so expect those recipes to come.
