Savory Pumpkin Quinoa Stuffing

Ingredients(for 2 servings):

  • 1/2 cup quinoa, rinsed
  • 1 green pepper, diced
  • 1 medium yellow onion, diced
  • 2 tablespoons olive oil
  • 1 cup broth(or water)
  • 1/2 cup pumpkin puree
  • 1 tablespoon savory seasoning(such as herbs de provence or poultry seasoning)
  • 3/4 teaspoon salt

Combine the quinoa and the broth or water over a stove or rice cooker and cook until the water has evaporated and the germ has released. While the quinoa cooks, sweat the diced onion and pepper in olive oil in a pan over medium heat for 5 or so minutes. After the quinoa is done, mix in the pumpkin puree over the heat and stir to combine. Add salt, seasoning, and the onion and pepper and mix. Serve hot.
