Chocolate Covered Ginger

This is less of a recipe and more of a “You should eat this now” advisory. I never thought chocolate and ginger paired so well together until I ate a Green & Black’s chocolate bar with ginger bits inside. It was mind-blowing. These are just the right balance of sweetness and spice to make you want another. And as you’ll read, it’s quite a healthy treat, too!

Ginger is something of a superfood. It’s been a ancient Chinese remedy for everything including nausea, diarrhea, the common cold, congestion, upset stomach, high-cholesterol, and heart disease. And of course, like all of my term papers, my facts are from Wikipedia. Basically, we should be eating much more of it, and with antioxidant-rich dark chocolate, for our health.

Chocolate-Covered Ginger

Ingredients:

  • 6oz chocolate chips
  • 1/2lb candied ginger

Melt the chocolate over a double broiler or in a microwave safe bowl. Lay out a piece of parchment paper on the table where the ginger can cool

One by one, dip the ginger into the chocolate, leaving a little uncovered at the top so people can see what it is.

Shake off the excess chocolate and gently place it on the parchment paper to dry.

Either let the chocolate cool at room temperature or move this on a tray to the refrigerator to harden quicker.

I think it says something that I’ve had this candied ginger for almost a year and hardly touched it, and then I covered it in chocolate and half is gone in 2 days. Next time I make these I might add a little chili powder into the chocolate to give it a kick.

    I would have eaten mounds of this during my first trimester to help the nausea. And to satisfy chocolate cravings. Perhaps a reason to have another one? Nah! I just need to find me some candied ginger somewhere.

    I recently just started eating a piece of candied ginger for dessert in lieu of my usual chocolate. This is borderline mind blowing. Now I can have my ginger AND my chocolate too!

    that G & B bar is one of my very favorites… I love ginger… and chili powder?? um… okay, do that, THEN chop them into smaller pieces and… add to brownies!!

    I have a funny/horrible story about chocolate covered ginger. When we first moved into the house we’re in now, we were unpacking the kitchen and had to leave unexpectedly quickly for something. Not thinking, we left a box of pantry goods on the floor. When we came home, it was obvious the dogs had gotten into some pasta, dry chickpeas, and crackers, and then we discovered the empty container of Trader Joe’s dark chocolate covered ginger. I started freaking out and Alex said we could induce vomiting with peroxide. I called the vet, and sure enough that’s an option. We weren’t sure which dog ate the chocolate, so we had to induce them both. We used a funnel to get the appropriate dose of peroxide down into the belly of each dog and then we waited. Well, the vomiting came alright, and my bigger dog threw up the chocolate, the pasta, the crackers, and the chickpeas… the little dog threw up his dinner. I’ve never seen an animal look at me with such contempt! They both are fine, but man what a night!

      Omg, that’s awful! But sort of funny in hindsight. I remember one time our neighbor calling us frantically because their dog ate Halloween candy Snickers and she had to go to the vet.

    I tried their chocolate-ginger bar and I wasn’t a fan of the chewing that was involved (I’m totally a “savor-your-chocolate” type of person), BUT I can say I’m all over chocolate covered ginger. Oh my gosh.

    Chocolate and ginger is seriously one of the best things. And a brilliant idea for next time to add some cayenne to the choc. As a kid, the best ice cream I ever came across was a crystallized ginger ice cream…

    One of these days, I’m going to get around to figuring out how to make my own crystallized ginger, so that I can see if it’s possible to do with slightly less sugar/with xylitol/with coconut nectar… but even just as is, it’s excellent.

    Get out of my head. I was just telling the girl who sat next to me in translation class today how much I LOVE ginger, and how much I LOVE dark chocolate (totally normal class small talk, right?). These look amazing.

    This is my all time favorite candy. Whole foods used to carry it in bulk but got rid of it. SOB!

    At least with this I can try to make my own.
