Chocolate Covered S'mores

I doubt there’s any way you could reinvent s’mores and have it not be delicious. Food bloggers test this theory every Summer and it always holds true. Here’s one more delicious s’mores recipe to throw into the mix.

By the beaches in Maine there are candy shops that sell just about everything covered in chocolate. Graham crackers covered in chocolate? Sure. Marshmallows covered in chocolate? Mhmm. But no s’mores covered in chocolate. Why not? Beats me. Thankfully, you don’t need to travel farther than your kitchen for something as delicious as this.

Chocolate Covered S'mores Fluff

Instead of melted marshmallows which would get stale in a refrigerator, this recipe uses marshmallow crème which is soft at room temperature just like a melted marshmallow. My favorite part about this is that Fluff is a naturally vegetarian marshmallow option, so you don’t have to go out and buy a $5 bag of marshmallows to get your s’mores fix.

Chocolate Covered S’mores

Prep time: 15 minutes

Cook time: 0 minutes

Ingredients(Makes 6 squares):

  • 12 graham cracker squares
  • 1/4 cup marshmallow Fluff
  • 6oz chocolate(about 3/4 cup chocolate chips)

Method:

  1. On half of the graham crackers, spread roughly 2 teaspoons of Fluff.
  2. Sandwich each covered graham cracker with an uncovered one and put these aside.
  3. Melt the chocolate in a microwave or over a double boiler until it is smooth and liquid.
  4. One by one, lower the s’mores into the melted chocolate. Flip once and use a utensil to make sure the sides are covered as well as the top and bottom.
  5. Take the s’mores out of the melted chocolate and put it on a non-stick surface to dry. You can quicken the process by moving them to the refrigerator once you’re done.
  6. Repeat with all the s’mores.
  7. Store in the refrigerator until ready to eat.

A fun thing to do might be to decorate the outside while the chocolate is melting with graham cracker crumbs and mini-marshmallows. These are the things I think of after I’ve eaten the whole batch. Shame.

This is one of my favorite recipes. I’ve blogged about it several times before and now I’m blogging about it again. It’s worth it though; I promise.

A friend mentioned how much he likes s’mores made with Reese’s peanut butter cups. In the back of my mind popped up my recipe for peanut butter s’mores bars and I promised to make them for July 4th.

After I made them I took fresh-looking photos and updated the recipe page. A few of the commenters who have made this said that their crusts didn’t stick together the way mine has. I think some of the confusion might come from how many graham crackers to use. I use Kinnikinnick 16 graham crackers(3 are pictured above), which would be the same as 4 sheets of graham crackers. It’s also relevant to mention the peanut butter I use for this recipe is always the kind without added oil so it generally mixes easier.

These have all the goodness of s’mores with added peanut butter and put into a portable form. They really are the ultimate Summer dessert. If gluten-free graham crackers didn’t cost an arm and vegetarian marshmallows a leg, I’d probably make these every month. For now they can just be a once in a long-while treat. 

No-Bake Peanut Butter S’mores Bars

I love it when people request certain desserts for parties because it makes it so much easier to decide what to bring. This year my cousin asked for Christmas Eve that I bring the same dessert I brought last year: Peanut Butter S’mores Bars.

These are absolutely one of my favorites, too. I’ve also been meaning to make them all year because I wanted to take better pictures than the old ones I had for this recipe, so it was an all around win. 

The bars are a layer of peanut butter graham cracker crust with a peanut butter and marshmallow filling topped with soft chocolate ganache. The best thing about them is that they’re no-bake, so you don’t have to turn on your oven to make these; just a microwave will do.

These bars can easily be adjusted for different dietary restrictions. To make them gluten-free, use gluten-free graham crackers. To make them vegan, use vegan graham crackers, vegan marshmallows, a dairy-free margarine and dairy free chocolate chips. I made all of these alterations for this batch and they came out perfectly.

No-Bake Peanut Butter S’mores Bars

Prep time: 15 minutes

Cook time: 0 minutes(allow at least 30 minutes for these to harden in the refrigerator)

Ingredients(Makes 16 bars)

For the crust:

  • 16 individual graham crackers(not full sheets) OR 8oz graham crackers crumbs
  • 3 tablespoons butter
  • 6 tablespoons natural style peanut butter
  • 1/2 cup powdered sugar

For the filling:

  • 1/3 cup natural style peanut butter
  • 2 tablespoons butter
  • 2 tablespoons powdered sugar
  • 1/2 cup mini-marshmallows, or 1 cup regular marshmallows cut into bite-sized pieces

For the top:

  • 6oz(about 3/4 cup) chocolate chips
  • 1 tablespoon butter 

Method:

  1. Melt together 3 Tablespoons of butter and 6 Tablespoons of peanut butter until it’s thin and creamy.
  2. Break the graham crackers into fine crumbs. Running them through a food process for 30 seconds is the best way to do this.
  3. In a large bowl, add the peanut butter mixture to the graham cracker crumbs. Sift in 1/2 cup powdered sugar. Work the dough until the ingredients have come together and press it into an 8×8 pan in an even layer.
  4. Make the filling by melting together 1/3 cup of peanut butter and 2 Tablespoons of butter. Sift in 2 Tablespoons of powdered sugar and beat until smooth.
  5. Pour the mixture over the crust. Spread it out to cover all parts.
  6. Press in the marshmallows on top of the peanut butter layer.
  7. Melt together the chocolate chips and 1 Tablespoon of butter until it’s smooth and runny.
  8. Pour the chocolate on top of the dessert in an even layer. Carefully spread it out to make sure it covers as much of the marshmallows as possible.
  9. Put the dessert in the refrigerator to harden. Remove 10 minutes before serving, cut into 16 pieces and serve.

I have a feeling I know what I’ll be making next Christmas Eve.

Healthy Frozen S’mores Parfaits

There’s been a recent explosion of s’mores desserts on food blogs lately. Besides making me think “You’re killing me, Smalls,” it’s also made me jealous and hungry for some s’mores(and if you don’t get the quote go out to Blockbuster or Red Box or however people get movies these days and rent The Sandlot). And so I made them my way, with chocolate banana soft serve, original Fluff, and a touch of gluten-free graham cracker crumbs.

These have just the right ratio of chocolate to marshmallow to graham cracker. It’s cool, creamy, and sweet; being from Massachusetts, I wouldn’t recommend anything other than marshmallow Fluff, but you could always use marshmallows or—gasp—an imitation marshmallow crème. Add a scoop of peanut butter, too, for something extra special.

Healthy Frozen S’mores Parfaits

Prep time: 10 minutes

Cook time: 0 minutes

Ingredients(Makes 2 servings):

  • 2 large frozen bananas
  • 3 Tablespoons cocoa powder
  • 2 Tablespoons Fluff OR 1/4 cup miniature marshmallows
  • 2 graham crackers

Method:
  1. Throw the frozen bananas into a food processor and turn it on. Blend until creamy.
  2. Add in the cocoa powder and pulse until it’s mixed in.
  3. Scoop the chocolate-banana mixture into the glasses. 
  4. Finish with a tablespoon of Fluff or marshmallows and graham crackers. Serve immediately.

Technically the recipe is for 2 parfaits but every time I’ve made this I’ve eaten the whole batch by myself. I’m not sure if it’s because I’m extra hungry or this is just extra good—I assume both. It’s (mostly) healthy anyway so dig right in.

As much as I love trying new things, I can’t get past old favorites. If a dessert is easy to throw together, I’m especially likely to keep the ingredients now “just in case” I need a sweet treat fast.

I made another batch of Peanut Butter S’mores Bars one week after my first batch. I’m obsessed. These were to bring to a Christmas party yesterday, and they were just as good as the first time. I even got requests to make them for a family birthday party in January—fine by me, any excuse to whip up another batch.

I also made another batch of microwave vegan fudge after coming home last week and realizing we had 4 pounds of earth balance. I’d like to say these were for a party or even neighbors but nope! I just made them because I was bored and craving chocolate. Don’t pretend like you wouldn’t do the same.

And now with my sugar coma I’m in awe that Christmas is just 5 days I way. I have a good idea at what some of my gifts will be and one sounds “picture perfect”. I can’t wait!

Oh, and if you thought things couldn’t get more chocolaty, just wait until tomorrow…

I’m usually not an impulse shopper. I always take a list to the grocery store and would rather wait to buy a book on sale at Amazon than pay the full price at a Barnes & Nobles. Hell, I’m so cheap I’m waiting for The Social Network to play on TBS to see it. But I have my weaknesses.

Dandies brand vegan marshmallows were on sale at Whole Foods and I threw them in my cart out of habit. How could I not? They were a dollar off. Never mind that I don’t care for regular marshmallows—it was a bargain.

When I asked Twitter what to do with marshmallows, a resounding number of people said s’mores. Now, I’m not the biggest s’more fan(shocking, I know), but add peanut butter and I wouldn’t complain. Slowly but surely that lead to these bars, which are about as rich and sweet as you can imagine a dessert to be. Besides being incredibly delicious, they’re no-bake and took me about 20 minutes from start to finish. So put on a fire, make some hot cocoa, and start baking(or not).

No-Bake Peanut Butter S’mores Bars

For the crust:

  • 16 graham crackers or 8oz graham crackers crumbs
  • 3 tablespoons butter(or non-dairy alternative such as Earth Balance)
  • 6 tablespoons natural style peanut butter
  • 1/2 cup powdered sugar

For the filling:

  • 1/3 cup natural style peanut butter
  • 2 tablespoons butter(or non-dairy alternative such as Earth Balance)
  • 2 tablespoons powdered sugar
  • 1/2 cup mini-marshmallows, or 1 cup regular marshmallows cut into bite-sized pieces

For the top:

  • 6oz(about 3/4 cup) chocolate chips
  • 1 tablespoon butter(or non-dairy alternative such as Earth Balance)

Melt together the butter and peanut butter until it’s thin and creamy.

Break the graham crackers to coarse crumbs. You might want to use a food process for this. In a large bowl, add the peanut butter mixture to the graham cracker crumbs and sift in the powdered sugar. Work the dough until the ingredients have come together and press it into an 8×8 pan.

To make the filling, melt together the peanut butter and butter again. Sift in the powdered sugar, and pour the mixture over your crust. Spread it out to cover all parts. Next, press in the marshmallows over all parts of the filling.

Lastly, for the top, melt together the chocolate chips and butter. Pour it on top of the dessert in an even layer. The less you have to spread it to cover all parts, the better. Put this in the refrigerator to harden. Cut cold and serve at room temperature for best results.

This is everything a dessert should be: rich, sweet, chocolate and peanut butter. It’s really hard not to want to eat the whole pan. You can use different brands of graham crackers to make it gluten-free and/or vegan depending on who you’re making these for. And no one will leave disappointed.
