Basil-Walnut Pesto
Ingredients:
- 1 1/2 cups loose basil(about 2 handfuls)
- 1 cup walnuts
- 1/4 cup parmesan cheese, grated*
- 3 tablespoons olive oil
*for a vegan option, use 3 heaping tablespoons nutritional yeast + 1/2 teaspoon salt
Add all of the ingredients besides the olive oil into a food process. Begin on low and notice how the walnuts turn into a coarse meal first, then the spinach. Once the two begin to blend, slowly add the olive oil in from the top. Stop once all the olive oil has been included and the whole thing resembles a paste.
