Nutella Cranberry Sauce

Cranberry sauce has always had an awkward place at the Thanksgiving table. Whether it’s homemade or canned, smooth or chunky, organic or not, no one ever quite knows whether to have it with dinner or dessert.

This cranberry sauce is unabashedly for your dessert menu. It’s tart, sweet, spicy, nutty, and a little citrusy—all the Thanksgiving flavors put into one. It might not sit well next to turkey and stuffing but serve it over some vanilla ice cream or chocolate pecan pie and everyone will love it.

Nutella Cranberry Sauce

Prep time: 5 minutes

Cook time: 10 minutes

Ingredients(Makes 2 cups):

  • 1 12oz bag fresh cranberries
  • 2 cups orange juice
  • 1 cinnamon stick(optional)
  • 1/2 cup + 2 Tablespoons Nutella
  • 1/4-1/2 cup sugar

Method:

  1. Combine the cranberries, orange juice, and cinnamon stick if using in a sauce pan. Add water just until the top cranberries begin to float.
  2. Boil the cranberries covered for 10 minutes until they’ve popped. Drain most of the liquid from the pot leaving about 1/4 cup with the cranberries.
  3. Pour the cranberries and remaining liquid into a food processor.
  4. Add in the Nutella and 1/4 cup of sugar and begin blending.
  5. Taste the sauce. Add more sugar for a sweeter Nutella flavor or keep as is for a more tart flavor.
  6. Serve hot or cold with ice cream, pies, cobblers, and tortes.

Almond Flour Pumpkin Bread

Christopher Columbus discovered America.

I discovered that you can make a moist and delicious pumpkin bread that’s gluten and grain-free. Not to belittle Mr. Columbus’ achievement, but I think that’s pretty damn good.

Maybe I’m just a little too excited because I wasn’t sure this could be done. A few hours before I pulled this loaf out of the oven, it was literally just a bunch of almonds and a whole pumpkin. Not pumpkin puree. Not almond meal. Just the raw ingredients.

After roasting + pureeing the pumpkin and grinding the almonds, I threw these ingredients together and hoped for the best. Luckily, the best is what I got. This pumpkin bread is sweet, soft, moist(I hate that word but it really is) and spicy. It’s one of the best pumpkin breads I’ve had ever; it just happens to be gluten-free.

Almond Flour Pumpkin Bread

Prep time: 10 minutes

Cook time: 75 minutes

Ingredients(Makes 1 loaf):

  • 2 cups almond flour
  • 3/4 cup brown sugar
  • 3/4 cup pumpkin puree
  • 4 eggs
  • 6 Tablespoons oil
  • 1/4 cup tapioca starch(or corn starch)
  • 1/4 cup water
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/4 teaspoon ginger
  • pepitas to garnish(optional)

Method:

  1. Preheat your oven to 350 degrees.
  2. Add all of the ingredients except for the pepitas into a large bowl and mix until fully combined. Stir extra well to ensure there aren’t any clumps.
  3. Grease a medium-sized loaf pan and pour the batter in.
  4. Bake for 75 minutes or until the center is cooked through.
  5. Remove and let cool for an hour before removing from the pan.

On top I spread a little(or a lottle) ginger jam. Have you seen this stuff? It’s made by Ginger People; it’s basically crystallized ginger made into a jam, and it’s heaven. A little goes a long way, though, which is why that jar has lasted me almost 2 years. This would also be good with pumpkin butter, cream cheese, peanut butter, or plenty of other spreads.

Sushi & BBQ—Memorial Day

Happy Memorial Day! It’s supposed to rain today but yesterday the sun was out in full blast for a great barbeque.

We spent the day with my best friend from high school and her family and friends. They’re all big readers of the blog and wondered why they hadn’t been on yet, so here you go! Thanks for the delicious food, John!

After a fun game of frisbee throwing and feeding the pet ducks, it was time to make the appetizers. We were having sushi with all the fixings and everyone pitched in in the kitchen.

And I flipped and cut the eggs. The secret to these sushi-filling eggs was to scramble in salt and sugar before they were cooked—never would have guessed that!

When we were all done, there was seasoned rice, cucumber, eggs, tuna, salmon, and avocado. This was a fun way for each person to try something new, especially since most of us hadn’t made our own sushi before.

Koko loved all of the attention she got almost as much as she loved the dropped sushi and beers.

And then there was dinner—I can’t believe I didn’t take any pictures of dinner. I think it was because I was too busy filling my plate. There was swordfish, steak, chicken, shrimp, and pork all grilled by John, a salad with greens from their garden, bean salad, and a root vegetable medley Eury and I prepped and roasted. It was all so good that no one at the kids table(didn’t you know you need to be over 25 to avoid the kids’ table? Sorry, Christian)remembered to save room for the ice cream we had just gone out and bought.

Irish Green Beans

Happy St. Patrick’s Day! I thought long and hard about what green recipe to make for today. By luck, I also had a bunch of green beans to cook with and this dish sort of came together itself. You may ask yourself what makes this Irish, to which I would answer the butter, potatoes, and simple seasoning. If that’s not stereotypical enough for you, I apologize that I couldn’t somehow work Baileys into the recipe; know that it’s there in spirit.

Irish Green Beans

Ingredients(Makes 4 servings):

  • 2 Tablespoons butter
  • 2 medium sized potatoes, diced and cooked
  • 1/2lb green beans
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper

Prepare your ingredients by dicing and cooking the potatoes through. You can boil, bake, or microwave them.

Heat the butter in a large pan over medium heat until melted.

Add in the green beans and potatoes and sauté lightly for about 10 minutes until the butter has coated everything and starts to brown.

Season the pan with the salt and pepper and toss. Serve hot.

Just when I thought I’ve eaten potatoes every way, there’s a new way to cook them. The butter and black pepper really help to make all the ingredients come together. It’s a hearty side dish that stacks up well against any main. So break out the lamb with steamed cabbage and start celebrating St. Patrick’s Day(or more likely just these and a beer).

What’s Not On My New Year’s Resolution List(And Why)

Every time this year millions of people make plans about what they’re going to change in their life. But not me. I’ve always hated New Year’s Resolutions. Part of it is that I’ll set unachievable goals for myself; part of it is that, if I want to change my life in September, I’m not going to wait until January to do it. Here are the things that you won’t find on my list:

December 29th 007

1. Dieting, because that’s no fun. I’m a healthy eater. I eat my greens, just sometimes that’s in the form of mint chip ice cream. I can deal with it.

2. Running a marathon. Yes, I’m signed up for one, and yes, I intend to train as best I can for the big day. But no one should push their body through 26.2 miles if it’s not ready for that. Instead of making your fitness resolution about the end point, make it about the journey.

3. Eating less chocolate, for the same reason as number 1.

4. Watching less TV. I admire Heather for her own goal but that’d be a lonely extra 12 hours each day.

5. Tweet less. I’m a bird and I’m going to chirp, chirp, chirp.

6. Going to bed earlier, because if I went to bed any earlier I’d miss my primetime television(see number 4).

7. Giving up coffee for green tea. It’s not the same; don’t let anyone tell you differently.

8. Being on The Today Show, because I don’t want to start getting desperate around next November and start sending kids through the air in silver balloons.

What does that leave? I’m not quite sure. I’ll leave it until 2012 to figure that out.
