Healthy Frozen S’mores Parfaits
Method:
- Throw the frozen bananas into a food processor and turn it on. Blend until creamy.
- Add in the cocoa powder and pulse until it’s mixed in.
- Scoop the chocolate-banana mixture into the glasses.
- Finish with a tablespoon of Fluff or marshmallows and graham crackers. Serve immediately.
Technically the recipe is for 2 parfaits but every time I’ve made this I’ve eaten the whole batch by myself. I’m not sure if it’s because I’m extra hungry or this is just extra good—I assume both. It’s (mostly) healthy anyway so dig right in.

Love this idea! I’m not huge on standard smores, but this I can get behind. The banana here is perfect addition.
(And I always love a good Sandlot reference!)

I will be making this very soon, because I am pretty sure I have all those ingredients on hand (I have been wondering what to do with the Fluff that I have in my cupboard). This looks super satisfying, and I love that it uses frozen bananas, because I have a bunch in my freezer.

There’s a bar in my hometown that makes keylime martinis with a graham cracker rim. Never tried it so I can’t say if they’re good or not, but you weren’t off the mark thinking martinis

Oh DAMN. This looks good. My instructor actually made “banana dessert” in a juicer today and everyone was so impressed. I was like…uh yeahhh it’s called banana soft serve and you can actually make it in a food processor. The blogworld is so ahead of the curve.

I would love to try this, but I HATE everything banana. Has anyone tried this? Does it taste strongly of banana? Or does anyone have a suggestion of something else I could use that wouldn’t taste too bad and might give it the same consistency? I’m stumped!
Wannabe Chef:
July 21st, 2011 at 9:20 pm
Mangos make a similarly creamy texture, but like the bananas you’ll be able to taste them in the finished product. You could also make it with other frozen fruit like berries but the texture will be more icy like a sorbet than creamy.

I just made this… HEAVEN! I didn’t have fluff but melted some chocolate marshmallows. I put a tiny bit of PB&Co’s Dark Chocolate Dreams on top too and froze it for a bit till after dinner. The PB froze almost to a soft candy. Simply amazing! I’ll be making these again, especially because I figured out my lactose intolerance and summer ice cream simply is not an option anymore!
