Chocolate Covered Peanut Butter Filled Strawberries

Sometimes covering things in chocolate just isn’t enough.

That’s when you add peanut butter.

I made these on Mother’s Day, even though I had seen my mom Saturday and wasn’t going to see her Sunday. What can I say? I’m not going for son of the year award. Since there’s nothing with chocolate that can’t be better with peanut butter, I figured these would work, and they did! And they’re just as simple to make as the original, too.

Chocolate Covered Peanut Butter Filled Strawberries

Ingredients:

  • Strawberries
  • No-stir peanut butter
  • Chocolate

Cut the strawberries in half.

Melt the chocolate in a microwave or double-boiler.

Put about a teaspoon on one side of each strawberry and sandwich it lightly with the other.

Gently roll the strawberry in chocolate, being sure to cover it all around about 3/4 of the way up.

Put the strawberries on a sheet of wax paper and refrigerate until the chocolate has hardened. Serve at room temperature.

These are a little messy, but oh-so worth it. The peanut butter adds just enough flavor to pair well with the chocolate. This will teach fruit to ever try and be healthy again.

    I love the “cut in half and then mold back together by covering in chocolate” method. I was thinking injection, because CoCo Sala here in DC uses that to fill their chocolate-covered strawberries with booze. But your plan, yes your plan, is much better.

    And has inspired me to contemplate chocolate covered chocolate mousse filled strawberries.

    These sound awesome! I love that they’d be easier to eat by cutting them in half (duh, why did I never think of that??) and the addition of the pb is right on point. I wonder how they’d be with a layer of nutella somewhere in there…hmmmmm. 😉

    Like this idea! For some reason, I has a flash of State Fair inspiration and thought, “These should be deep fried.” When you lived in Dallas, did you go to the fair? If so, you will know that everything gets fried that month, even fruit.

      I’ve never lived in Dallas, but I’ve definitely seen the episode of Oprah where she eats deep fried butter.

        Sorry. I feel a bit like a dweeb right now… I totally mixed you up with someone else. Please forgive me!

        Well, at the Texas State Fair they have a competition each year for people to create new fried foods.

        Like… fried butter (which was a pat of butter inside of a ball of biscuit dough, guacamole, oreos, grilled cheese sandwich, pb sandwich, jeally beans, cheesecake, beer, coke, margarita, Snickers, queso, peaches and cream, bacon, chocolate truffle, Frito pie… to name a few.

        Some are amazing… some not so much.

        It is one day a year… one artery clogging day a year.

    Yummmmm! I reeeeaaally want to try these. I just made chocolate hazelnut butter. Although peanut butter does sound really good… I’d have to try both 😀

    Oh my gosh – how have I never thought of this before!? So amazingly simple and delicious!

    Though maybe if I make them I’d have to use chocolate PB. Because you can never have too much chocolate 🙂

    Peanut butter and chocolate are meant for each other. So are strawberries and chocolate. Still, I never would have thought to mix all three. This may be the best idea ever.
