Peanut Butter And Potato Chip Truffles

Things have gotten a little crazy around here. I have this week to wrap up all of my midterms while preparing to fly to DC on Friday for the National Marathon and let’s just say I’m starting to lose it. This recipe is proof of that.

Popchips asked me if I’d like to take part in their Munch Madness recipe contest and I happily agreed. I know nothing about basketball, as proved by the fact that I’m dead last in my brackets group, but I know a whole lot about cooking and eating. I’m not sure what convinced me potato chips, chocolate, and peanut butter would all go together—I guess you have to be a bit mad—but they do, and these are deliciously addicting!  A perfect way to wow and alarm your guests.

Peanut Butter And Potato Chip Truffles

Ingredients(Makes 12 truffles):

  • 6 Tablespoons natural peanut butter
  • 2 Tablespoons butter, softened
  • 1 cup confectioners sugar
  • 1/2 cup crushed original popchip crumbs + more for dusting(or any other salty treat)
  • 1/2 teaspoon salt
  • 8oz chocolate chips

Mix together the peanut butter, butter, and confectioners sugar. Once mixed, add in the popchip crumbs and fold in until evenly distributed.

Roll the dough into 12 balls and place them on a baking tray. Freeze for 15 minutes.

Meanwhile, melt the chocolate chips. Once ready, individually roll the peanut butter balls in the chocolate until they’re completely covered. Put them back on the baking tray and top with a little popchip crumbs.

I know these sound crazy. I know I am crazy. But my taste buds aren’t crazy, and these are gooood.

    These sound amazing! I just made dessert out of leftover brown rice, turning it into various sweetly inspired balls, but I should have thought about making a salty/sweet flavor. Next time! Thanks for the inspiration.

    These look so good! There is a candy store near me (that I try not to go into too often) that has chocolate covered potato chips…soooo good. I think adding peanut butter probably makes them ten times better.

    I don’t doubt that these are amazing! My grandma makes potato chip cookies and puts nuts in them, and they are amazing and addicting. Chocolate and peanut butter with potato chips is probably even better!! That’s impressive that you thought of such a good idea while trying to prep for your marathon and go through midterms!     Not crazy at all! My husband’s daughter and her fiance turned us on to potato chip and macadamia chocolates when we still lived in HI and they visited us, and I’ve made them myself a few times since then. The ingredients scare me to eat, but the sweet/salty/chocolaty is addictive for sure!

    I don’t think this sounds crazy at all! I love savory and sweet and have enjoyed chocolate-dipped potato chips in the past (so good) so these truffles are definitely up my alley. Great work!!

    Peanut butter and potato chips are one of my favorite sandwiches so I can only imagine how wonderful these little truffles are! I’m going to have to try them soon- I think I actually have some potato chips in the pantry! 🙂 Hope you had a lovely time in DC.. it was cold this weekend!

    That’s gotta be the weirdest, wackiest truffle I’ve ever seen! But weird and wacky is a good thing! It actually sounds really good! I like how you were thinking outside the box. Who would have ever thought of that combination? Not me, but I’m sure it works! 🙂

    I just made these. I don’t use refined sugar, so I tried coconut palm sugar and pulverized it. It required more peanut butter. These are very good, but I left out the 1/2 tsp of salt and next time I would definitely use it.
